Easy Berry Instant Pot Oatmeal

May 8, 2020 · FEEL-GOOD FOOD

Instant Pot Oatmeal

Instant Pot oatmeal is a great way to sneak in a hearty breakfast in a fraction of the time!

I'll be honest - I go through phases with oatmeal. Sometimes I love it as a quick, warm and filling breakfast. Other days, I can't stand the texture of it. If you're currently in the "love it" phase with me, this Instant Pot oatmeal recipe is sure to hit the spot!

I've made oatmeal lots of ways, and truthfully, I've been burned by using my Instant Pot for it in the past (no pun intended). The trick is to spray the inner pot, add plenty of liquid, and to stir well before cooking to avoid the dreaded "burn" message.

The Instant Pot is a great way to make your oatmeal because it comes together and quickly cooks in just a matter of minutes. No need to make it the night before or stand over the stove! Y'all already know I'm a believer in all things Instant Pot.

This easy, delicious berry oatmeal is kind of a staple breakfast recipe - one definitely worth saving for your next pro-oatmeal phase! 🙂

Why Oatmeal?

Soluble fiber causes whole rolled oats digest slowly - which means you'll stay full longer. Or as my dad used to say when I was a kid - "It sticks to your ribs!" Either way you spin it, oatmeal is a great breakfast option because it'll keep you from snacking until lunch.

This Instant Pot oatmeal is also a great option for weekly meal prepping. Just make a batch, parse out into single servings, and store in the refrigerator throughout the week. If you're used to leaving the house in a rush in the morning, this can be a great option for a grab-and-go breakfast that you can microwave later on at work.

I use a 6-qt. Instant Pot Ultra, but the new Instant Pot Duo Plus is the most comparable new model. I've linked this model throughout this post for you to shop if you'd like!

  • 2 1/2 cups milk
  • 1 tbsp chia seeds

  • 2 tbsp sweetener of choice (I used honey)
  • 1 cup fresh or frozen berries

Notes

Note that it can take up to 10 minutes for the Instant Pot to come to pressure. In all, this recipe will take about 20 minutes from start to finish.
Feel free to substitute 2 Tablespoons of any sweetener of choice for the honey.
You can also use mixed frozen or fresh berries. Fresh berries will break down more than frozen.

I strive to create balanced recipes with wholesome ingredients, and I think you'll find just that with this easy berry Instant Pot oatmeal recipe. You can use fresh or frozen berries and customize the type of sweetener you want to use based on your preferences. However you like it, give it a try and let me know how it went in the comments!

Enjoy!

I'm kind of a ride-or-die for Aldi.

I try to do most of my shopping exclusively at Aldi for one big reason: they save us BIG money! With a wide selection of wallet-friendly products that are comparable to name-brands, I can shop without worrying if I'm going to break my grocery budget. That's a big win for our family!

I love trying new products and foods here without worrying about spending an arm and a leg. Plus, Aldi has a variety of health-conscious products, so if you're trying to shop for specific dietary needs, you'll still be able to find the essentials.

But if you have anxiety about forgetting the quarter for your cart or bagging your own groceries at the end, you're not alone! Frankly, there are days when I just need a few essentials and I don't have time to stop what I'm doing to shop for groceries. If that sounds like you, you need to try Instacart!

Instacart is a website and app that allows users to browse a store's items, add them to their cart, and let someone else do the shopping for them. You can upgrade to a subscription if you'd like, or pay for grocery delivery as you need it!

Breakfast Essentials

I picked up some hazelnut spread (the Aldi version of Nutella) and their protein pancake & waffle mix (comparable to Kodiak Cakes). Both products are super similar to their name-brand counterparts, but Aldi sells them for a fraction of the cost!

The hazelnut spread is so good on toast with sliced bananas, but you can enjoy it as a snack with pretzels or some other dipper as well! And if you're like me and are seriously hungry in the morning, protein pancakes are a great way to fill up and stay full. Try these, or make your own using this recipe.

Perfect for Your Pantry

A little something old, and a little something new! Aldi's Elevation protein brand has been around for a while now, but every now and then they add new products to the mix.

Out of all the granola and protein bars at Aldi, I feel confident enough to say that these chocolate peanut butter bars are the best. (I've tried a lot of duds!) If you think the other flavors might be worth trying... Well, go ahead. But you'll more than likely come back to these!

Pro Tip: Save yourself some major embarrassment and don't buy the low-carb bars. They're loaded with fake sweeteners that will give you gas all day long! During the time I was going low-carb, I tried these and found out the hard way. My tummy was not happy with my life choices. And in my opinion, other granola bars just don't fill me up well - they're full of filler carbs that our bodies burn through quickly. And that's no bueno for this hungry mama!

I have yet to try the new protein bite mix, but I just love that they've made it easy for us to put together a quick, healthy recipe at home. Unfortunately, there's no link for these as they're just testing out this new item. You might find them in your local store! However, if you prefer to make your own protein bites without the mix, try this recipe!

When I need a little afternoon energy boost without the caffeine, I like to drink carbonated water to wake me up and keep me hydrated. Aldi's Belle Vie sparkling water is just like La Croix or Bubly, but a fraction of the cost. I've tried a few flavors, but I always keep coming back to lemon. It's crisp, simple, and refreshing!

Healthy for You (And Your Best Friend!)

One of the things I love the most about Aldi is that they make it easy and affordable for me to eat healthy. This chopped salad kit is one of my favorites for a quick side dish or lunch. They have a few different kinds, but the sunflower crunch flavor is my favorite because it doesn't get soggy like some of the others. You literally just throw everything in a bowl, shake it up, and eat! It's that easy!

Last (but of course, not least), Aldi has a number of pet items so that you can even save on products for your furry friends! These mini dental sticks are the perfect treat for Sadie Belle while also cleaning her teeth. And as inexpensive as these are, I don't have to feel bad about throwing her a bone once in a while! (See what I did there?)

Add to Cart!

Love these Aldi finds? You can add all of these and other grocery essentials to your cart right now using Instacart! They make it super easy and take the hassle out of grocery shopping. Shop from home and let somebody else do the grocery schlepping! (Now that's a word I never thought I'd use.)

Happy Shopping!

Peanut Butter Chocolate Protein Balls

October 28, 2019 · FEEL-GOOD FOOD

Peanut Butter Chocolate Protein Balls

When snack time hunger hits, making smart food choices can be difficult.

This super easy, protein-packed recipe is here to make that choice easy for you! Instead of surrendering to the vending machine or the drive-through, make a batch of protein balls that will last through the week to satisfy your hunger.

In a much unhealthier time in my life, I would ignore and fight through my snack time hunger and wear it like a badge of honor. All my life I had observed women bragging about skipping meals and restricting calories as if that were the new normal. But hunger is a signal from your body that you need nutrients, and making good food choices when you're hungry will lead to a healthier body and mind. Ignoring those hunger signals is simply depriving your body of what it needs, and it's important that we stop treating food restriction as something to be proud of.

Protein is an essential macro nutrient that will fill you up and keep you full so that you can keep going throughout the afternoon. You already know that I love using protein powder as a dietary supplement, and this is a super easy way to incorporate more protein into your diet. It's also packed with natural peanut butter, which is an excellent source of healthy fats and even more protein. What could be better than a peanut butter and chocolate combo?! (I'll wait.)

So, busy ladies, take a half hour to throw together a batch of these peanut butter chocolate protein balls and fuel up for the week. You got this!
